Strawberry Iced Tea


For a caffeinated strawberry tea use black tea. For a naturally caffeine-free option use rooibos tea. Use freshly boiled water to steep this tea properly.


Add 2 teaspoons tea leaves or 2 tea bags and let steep for 5 minutes in just boiled water. Remove tea or tea bags, cool, cover and refrigerate for at least 1 hour.


Make an infused simple syrup that yields 1 1/2 cups. Use 2 cups fresh strawberries, washed, hulled and halved. 1 cup water and 1 cup granulated sugar. Can use coconut sugar. In small saucepan over medium heat combine ingredients and bring to a boil and then reduce heat to simmer. Stir occasionally. Remove from heat after simmering for 15 minutes. Strain. Cool and pour into an airtight container and refrigerate for up to 3 weeks.


In a glass add chilled strawberry syrup (to taste) and ice, chilled tea and several sliced strawberries. Stir to combine before serving.
