A simple spinach dish served at room temperature.
I just got my Misfits box and did not get spinach but collard greens (which I love), so I make this recipe with those greens and take the ribs out first.
10 ounces to 1 pound spinach washed and trimmed
1 1/2 T. soy sauce or coconut aminos
1 1/2 T. Mirin
1 T. white sesame seeds, roasted and lightly crushed
Fill a 4–5-quart pot 3/4 - full of water and bring it to a rolling boil. Drop spinach into it. Push the spinach down, if necessary. Cook the spinach 2-3 minutes or until it has wilted completely. Drain into a colander.
Run cold water over the spinach to cool and fix its bright green color. Squeeze out all the water and place into a bowl. Add soy sauce, mirin, and crushed sesame seeds. Mix well. Divide into 4 portions. Make piles of each portion.
Serve at room temperature. I like this with a few green onion tops added before serving on rice.
