A delicious pink tea drink with fresh strawberries, dried rose petals and green tea. My favorites for this are Healing House Herbs Green Cherry Rose, Ruby Earl Green, or Rose Green.
To make this drink blue instead of pink use fresh blueberries and Blue-Sky Green Tea.
A combination of fruity and floral flavors makes up this frozen pink or blue drink. Refreshing!
Serves 2
4 c. ice
1 1/2 c water
1 1/2 c strawberries diced or blueberries
1/2 c white sugar
1/4 c coconut cream (top of canned coconut milk) or heavy cream
4 teaspoons of selected tea or teabags cut open to equal 4 teaspoons tea
Topping: 1/2 c. coconut cream (top of canned coconut milk) or heavy cream
1 T. white sugar
Lightly whisk cream and sugar until soft peaks form. Set aside in refrigerator. (Keeps 1-2 days)
Latte: Puree diced strawberries or blueberries and 1 1/2 c. water in blender.
Heat puree with sugar and water. Bring to a boil then lower heat and simmer.
Infuse tea into the syrup by cutting teabags and placing tea into mix (or loose tea) when simmering.
Turn off heat and cool. Strain when cool with a mesh strainer, discarding solids when strainer is full. Place in refrigerator to chill.
In a blender, combine infused syrup, ice and 1/4 c cream. Blend until smooth.
Pour frozen drink into two cups. Top with whipped cream and serve with a straw and enjoy. Top with a sliced strawberry or few blueberries if desired.
