I was sad to see my basil wither with the first frost. I grew all types this year, cinnamon, Thai, lemon, plain. I love to add the leaves to tea. My favorite is lime but I grew a lot last year and have some dried. So I decided to make Cilantro Pesto. I know some people do not like Cilantro but I also make an arugula-pumpkin seed pesto that is yummy and healthy as well!
Cilantro Pesto
1/2 cup olive oil
2 1/2 cups cilantro
1 cup spinach
1/2 cup chopped fresh chives
1/4 cup walnuts
1 garlic clove
4 teaspoons fresh lemon juice
1/4 teaspoon salt
Enjoy!!
